The hot weather has made the roses bloom a little earlier this year. One of my favorites in the herbal garden are the apothecary roses. Rosa 'mundi' is a variegated rose seen below. Apothecary roses are ancient roses and remember roses are edible flowers. Just remember that all roses are edible. Just do not eat sprayed roses or roses that you might receive from the florist. Nine chances out of ten they have been sprayed. Make potpourri out of them. There is also a white heel of the petal that should be removed before they are eaten. I was hoping to make some rose jam this year, but we had 2 and almost a half inches of rain last night and a lot of the petals are gone.
Note to FlowerLady, dry your jasmine flowers for tea. My hardy pink jasmine flowers lose their scent. They are not for tea or even potpourri.
